Only eggs, coconut flakes/milk, orange zest, and Jerusalem artichoke syrup. Cooked on a skillet under a lid – soft, aromatic, with a light yogurt cream. Perfect for diabetics, weight loss, and healthy dessert. Takes 5 minutes prep + 20 minutes cooking. So delicious you’ll want it every day! Cook with love and enjoy! Recipe for cooking and ingredients: • 3 eggs • 1 cup coconut flakes or coconut flour (90 g / 3.17 oz) • ⅓ cup coconut or oat milk (85 ml / 2.8 fl oz) • Zest of 1 orange • 2 tbsp Jerusalem artichoke syrup (or your favorite sweetener) • 1 tsp baking powder • Pinch of salt For the cream: • 3 tbsp yogurt • ⅔ tsp stevia (or your favorite sweetener to taste) For decoration: • Coconut flakes • Jerusalem artichoke syrup (optional) Equipment: • Skillet greased with vegetable oil + parchment on bottom • Medium heat, covered – 20 minutes Instructions 1. Whisk 3 eggs + pinch of salt + zest of 1 orange + 2 tbsp Jerusalem artichoke syrup. 2. Add ⅓ cup coconut/oat milk and mix again. 3. Stir in 1 cup coconut flakes/flour + 1 tsp baking powder. Mix thoroughly. 4. Let the batter rest for 10 minutes. 5. Grease the skillet with oil, place parchment on the bottom, pour in the batter. 6. Cover with a lid and cook on medium heat for 20 minutes. 7. Cream: mix 3 tbsp yogurt + ⅔ tsp stevia. 8. Let the cake cool completely. 9. Slice in half. 10. Spread cream on both layers and stack them. 11. Drizzle top with Jerusalem artichoke syrup. 12. Decorate with coconut flakes. 13.
