For the Pumpkin Pancakes: • 350 g (12 oz) pumpkin (peeled, seeded, and skinned) • 2 eggs • Pinch of salt • Sweetener to taste • 400 ml (1½ cups) milk • 60 g (⅔ cup / 2 oz) oats (ground in a coffee grinder) • 130 g (1⅓ cups / 4.6 oz) all-purpose flour • 3 tbsp coconut oil For the Creamy Layer: • 20 g (⅕ cup / 0.7 oz) instant gelatin • 50 ml (¼ cup / 1.7 fl oz) cold water • 500 g (2½ cups / 17.6 oz) yogurt or sour cream • 140 g (¾ cup / 4.9 oz) sweetener • A bit of mint vanilla (to taste) Assembly: • 16 cm (6.3 in) ring mold + parchment + acetate film Serving and Storage • Serve chilled — with tea or as a light dessert. • Store in the refrigerator for up to 3 days.
